An Asian craving- Orange Teriyaki Egg- Veggies

Stir Fry

I came up with this Stir: pea pods, carrots, green onion, asparagus, garlic, pepper, and celery (various spices as well). I Cooked it in a large deep skillet in almond milk until the veggies were near the desires doneness. I then took two eggs (plus a little extra egg white), lightly stirred it in a bowl so that the mixture was not quite uniform,  poured it over the veggies, and immediately covered the pan for a few minutes for the eggs to cook. I also sauteed some chopped garlic and onion powder in the pan. I put the egg- veggies over a nice big bed of brown rice and then poured on an orange teriyaki sauce (3T teriyaki sauce, 2T orange juice mixed). Big turnout, and incredibly satisfying after a hard ride!
