Carrot Cake Oatmeal w/ Maple “Frosting”

Carrot Cake Oatmeal

This is not my recipe but a modified version of the original. Obviously, if I didn’t like something, I wouldn’t post it. yummy way to get more fruits in at breakfast.


1/2c rolled oats

1/2c milk

1/2c water

3 baby snack carrots, grated

2-3 oz of mango, cubed (or pineapple)


1/2tsp cinnamon

1tsp vanilla extract

1/4c plain yogurt

2T real maple syrup

handful of pecans

Grate the carrots, cube the mango.cook 1/2c rolled oats in 1/2c milk (yourchoice, i used almond milk) and 1/2c water. while the oats are cooking, add the raisins, mango, and carrot, continuing to cook over a low/ medium heat. when it is nearly finished, add the cinnamon and vanilla.

in a small bowl, mix the yogurt and maple syrup well, and pour it over the oatmeal (when its in a bowl). top w/ nuts.

just a warning, the mango is going to be VERY hot if you try to eat it right away. proceed with caution. :p
